PEAR AND PECAN WINTER SALAD I NO SAD SALADS SERIES

Super quick, super easy and oh so delicious!





INGREDIENTS FOR 2 BIG SALADS

  • about 200 grams of leafy greens of your choice

  • 2 pears

  • 1 cucumber

  • 100 grams of pecan halves

  • 80 grams of dried cranberries

  • 100 grams of blue cheese




OPTIONAL


Pretty much anything will work in this salad. Check out this YouTube video and see how I swap the blue cheese for another one, skip the pecans and add leftover tomatoes and sweet potato fries to clear my fridge and win a great dinner at the same time.



DRESSING

  • 6 tbsp of Vinegar ( I tried both with apple cider vinegar and with Red Wine vinegar and both worked well!)

  • 2 tbsp of Dijon Mustard

  • 100 ml Olive Oil

  • a tablespoon of honey or half a sweet orange squeezed

  • Salt and pepper to taste


STEPS

  • In a large bowl add greens, pears, dried cranberries, and pecans.

  • In a small bowl whisk together the vinaigrette ingredients.

  • Pour vinaigrette over salad and toss

  • Top with crumbled blue cheese
